Pumpkin Pasta Recipe

Here is another comforting fall recipe for you. The recipe is for pasta with a warm and comforting pumpkin sauce. Here is what you need:

Ingredients:

Salt

12 oz Ronzoni Garden Delight Penne

2 tablespoons extra virgin olive oil

1 large shallot finely chopped

3 gloves of garlic grated

2 cups low fat chicken stock

1 (15 oz) can pumpkin puree

1/2 cup of heavy cream

Hot sauce to your liking (I like it spicy, so I use 3 teaspoons or more)

Pinch of nutmeg

2 pinches of cinnamon

Pepper

Grated Parmigiano-Reggiano cheese

Directions:

Prepare pasta according to directions on the box for al dente. In a medium size pan heat olive oil on medium heat. Add shallot and garlic to the pan saute for about 3 minutes. Stir in chicken stock, pumpkin, cream, hot sauce, nutmeg, cinnamon, salt and pepper. Reduce heat to medium low and simmer until thicken. Toss with the pasta and top with grated cheese.

  3. My mother makes a great pumpkin soup that I love but I’ve never had pumpkin pasta before. I love pumpkins so may have to give this a try. With so much pumpkins available I need to try out most of the recipes I’m finding.

  4. I know I woulod eat it, not so sure about my Hubs. He won’t touch pumpkin pie but loves acorn squash. I don’t think he had it growing up so maybe it is an aquired taste.
