Tasty Tuesday~Easy Valentine’s Day Ice Cream Sandwiches

I love making easy sweet treats for the holidays, and Valentine’s Day is no exception. I found Mickey Be My Valentine Shaped Sugar Cookies from Pillsbury the other day, and thought they would be perfect to use for bite size ice cream sandwiches.

Easy Valentine’s Day Ice Cream Sandwiches

Here is what I used:

Pillsbury Mickey Be My Valentine Shaped Sugar Cookies

Blue Bell Cherry Vanilla Ice Cream

Red and White decorative sugar

Small cookie dough scoop

Directions:

Bake sugar cookies as directed on the package. Place on wire rack to cool completely. In the meantime take ice cream out of the freezer and allow to soften. When cookies are cool, and ice cream is soft, scoop ice cream and place between 2 cookies. Sprinkle ice cream with decorative sugar. I wrapped the cookies in plastic wrap and placed back in the freezer. These make delicious, bite size sweet treats perfect for Valentine’s Day!
