Avocado Jalapeno Soup Recipe
It doesn’t matter what time of year it is my family and I love soup. I had never tried cold soup before until recently. My husband and I found a recipe in our Sunday paper Parade section a couple of weeks ago that we wanted to try. We made a couple of adjustments and came up with a light, delicious, spicy cold soup. It is a fantastic soup that is perfect for summer!
Here is what you need:
3 large avocados (pitted and peeled)
1/2 cup fresh lemon juice
2 jalapenos (stemmed and seeded)
1 sprig of cilantro
1 teaspoon minced garlic
1 teaspoon of salt
4 1/2 cups water
1 large tomato chopped
Fresh cilantro for garnish
Directions: Put the first 7 ingredients in a blender and puree until smooth (1-2 minutes). Refrigerate until chilled at least 1 hour. Place into bowls and topped with chopped tomato and cilantro.

  1. This looks yummy! I use the ingredients minus the garlic and the tomato to make a salsa…Can’t get enough of it.
