Pineapple Salsa adds an extra layer of flavor to your favorite meals.
Pineapple Salsa

This week I wanted to share a delicious salsa that is the perfect complement to a variety of food, the recipe is for Pineapple Salsa. The great thing about this recipe is you can make it as mild or spicy as you like, as well as, use fresh or canned pineapple. My dad came over for dinner so we made it a little milder than we usually would have, but it was still extremely flavorful and delicious. We used the salsa to top Coconut Crusted Cod, but it is really versatile and goes great with a lot of dishes.
Here is what you need:
1/2 medium pineapple cut into small pieces
1/4 of red onion diced small
1/2 red pepper (seeded and ribs removed) diced small
1/2 jalapeno pepper (seeded and ribs removed) diced small
Zest of 1/2 lime
Juice of 1/2 lime
1 Tablespoon fresh orange juice
1 teaspoon extra virgin olive oil
Salt and pepper to taste
Combine all ingredients and chill before serving.
