Tasty Tuesday~Tortilla Soup Recipe

I absolutely love soup because it is easy, quick and delicious. One of my son’s favorite soup is Tortilla Soup. I have been making it for years and have toned down the spice with the grandchildren in the house, but it is still just as delicious as it is when it is spicy. You can pretty much switch things up to make it to your liking.

Tortilla Soup Recipe
Here is what you need:
3 cans Rotel mild tomatoes and diced chilies-undrained
4 cups low sodium chicken broth
1 can (15 oz) Rosarita no fat refried beans
1 can mexicorn-drained
2-3 cups of cooked diced chicken
Tortilla chips (I use the broken ones at the bottom of the bag)
Toppings of your choice (cheese, sour cream, etc.)
Directions: Combine rotel, chicken broth, refried beans, corn, and chicken. Bring to a boil lower heat and simmer for 15 minutes. Place crushed tortilla chips in the bottom of the bowls and pour soup over chips. Top with your favorite toppings.
