Tasty Tuesday~Simple and Delicious Paella Recipe

I wanted to share a simple and delicious paella recipe that my husband makes. I know that typical paella has a variety of meats including shrimp, but we skip that because of my food allergies. You can also alter the spice to your liking. When we make it with the kids, we don’t the extra spice.

Simple and Delicious Paella
Here is what you need:
2 tablespoons olive oil
1 tablespoon paprika
2 teaspoons oregano
salt and white pepper to taste
1 pound boneless, skinless chicken thighs (we use bone in)
3 cloves crushed garlic
2 1/2 cups uncooked short-grain white rice
1 pinch saffron threads
5 Roma tomatoes de-seeded sliced
1 tablespoon freeze dried parsley
1 quart chicken stock
1 large lemon, zested
1/2 of a large red onion chopped
1 red bell pepper coarsely chopped
1 pound chorizo sausage crumbled
1 tablespoon dried Jalape├▒os (optional)
Simple and Delicious Paella

Directions:
Put oil in a large pan (we have a paella pan) and heat on med-high. Sear the chicken with salt and pepper cook until almost done. Add chorizo, breaking it up as it cooks. Add the onion, bell pepper and tomatoes and simmer 10 minutes. Add the paprika, white pepper, red pepper flake, oregano and parsley stir in. Add chicken stock and simmer. Add rice and saffron and simmer until the liquid is absorbed and rice is soft.
